Home Entertaining Thursday... One of my long time girlfriend (an unfrilly, no point in cooking, gun toting, coke-bottle shaped officer of the law) inspires this week's posting. She sends me an email re-requesting a recipe I gave her years ago (January of 2007). She and her siblings have decided to prepare dinner for their "woman who has everything" mom this Mother's Day.

She's only made it maybe twice but she remembers it as her "didn't have to do anything" meal. And couldn't we all use one of those? So here's my gift to you...a no-brainer recipe for all occassions. Happy Thursday!!!

Cheesy Chicken & Rice Casserole

1 can (10 3/4oz.) Campbell's Cream of Chicken Soup

1 1/3 cups water

3/4 cup uncooked long-grain white rice

2 cups fresh or frozen mixed veggies

1/2 tsp. onion powder

4 boneless, skinless chicken breasts

1/2 cup shredded cheddar cheese


1. Stir soup, water, rice, veggies and onion powder in a 12 x 8 or 9 x 13baking dish.

2.Top with chicken (season chicken with the seasonings you like).

Cover(Foil will work if you don't have a dish with a lid).

3.Bake at 375 for 45 min. or until done. Top with cheese (the cheese should melt a little).
